Lazy Gourmet SOUPer Simple Soups and Sides

Great things to try for the busy family that's always on the go.   The ingredient lists are short and nutritious, too!


Hamburger Vegetable Soup

1 lb. ground beef, browned and drained
1 can whole kernel corn - undrained
1 can sweet peas - undrained
1 can sliced carrots - undrained
1 can green beans - undrained
1 can V-8 Juice
Salt and Pepper to taste

Mix all ingredients in stock pot or large crock pot. Simmer all day for full flavor.

Spicy Cornbread

2 boxes Jiffy Cornbread mix
1 pkg. Taco seasoning

Prepare cornbread according to box directions and add taco seasoning to
mixture. Bake as directed.

Chicken and Rice Soup

2 cans chunk chicken
2 large cans of chicken stock
1 cup cooked rice
1 can sliced carrots
salt and pepper to taste

Mix all ingredients in stock pot or large crock pot. Simmer all day for full flavor.

Cheesy Garlic Bread

1 loaf French bread
butter
garlic powder
1/2 cup mozzarella cheese

Slice bread length-wise into two separate halves. Spread butter on both halves. Sprinkle to taste with garlic powder. Place on an ungreased baking sheet and place in a preheated 325F. oven for ten minutes. Remove from over; cover each half with 1/4 cup of grated mozzarella cheese and return to oven for approximately 5 minutes, or until cheese has slightly browned. Allow to cool for 5 minutes and slice into single serving chunks.

Turkey Noodle Soup

1 cup cooked turkey pieces
1 pkg. egg noodles
1 can chicken stock
1 can whole kernel corn
1 can V-8 Juice

Mix all ingredients, except noodles, in stock pot. Cook on medium heat, slowly bringing soup to boil. Add noodles and cook for another 10-15 minutes, until noodles are tender.

Crockpot Zucchini Bread

1/2 tsp. Salt
1/2 tsp. soda
1/8 tsp. Baking powder
1 1/2 cup Flour
1 1/2 tsp. cinnamon
2 Eggs
1/2 cup Oil
1 cup Sugar
1 1/2 tsp. Vanilla
2 cup Zucchini, peeled and sliced
1/2 cup chopped Nuts

Sift first 5 ingredients together. Mix eggs, oil, sugar and vanilla until blended. Sift in dry ingredients and mix until moistened. Fold in zucchini and nuts. Place in greased and floured special baking pan for slow cooker. Cover and cook on high for 2 to 3 hours.
